The Best Cocoa Zucchini Cake




Why would you put zucchini in a cake? Cause its the most moist & rich cake you could make and my nonna does it and you just don’t question her. haha… So this is my healthy version of it…less sugar.. whole wheat flour, and its more zucchini then any other ingredient.:)

  • 2 cups of whole wheat flour
  • 1/2 cup of white sugar
  • 1/2 cup of honey
  • 3/4 cup of cocoa powder
  • 2 teaspoons of baking soda
  • 1 teaspoon of baking powder
  • 1/2 teaspoon of salt
  • 1 teaspoon of ground cinnamon
  • 4 eggs
  • 1 cup of coconut oil melted
  • 3 cups of grated zucchini



1. Combine all dry ingredients in a bowl and whisk so the clumps are out

2. Combine all wet ingredients into another bowl and whisk

3. Combine wet ingredients to dry ingredients. Fold in the zucchini. Thoroughly mix & pour into a 9×13 greased baking pan.

4. Bake in the oven for 40-50 mins at 350F, put a knife in the center and make sure it comes out clean to test if the cake is done.

5. Serve warm with vanilla ice cream ! or ice it 🙂
