Carrot – Banana Bread

This is a perfect treat on a weekend morning!

What you’ll need:

  • 2 ripe organic bananas, mashed
  • 1 cup of shredded organic carrots
  • 1 1/3 cup of Bob’s Red Mill Gluten Free All Purpose Flour
  • 1 tablespoon Bob’s Red Mill xanthan gum
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 tablespoon coconut oil, melted
  • pinch of salt
  • 1/2 cup of organic natural cane sugar
  • 1 egg & 1 white
  • 1 teaspoon cinnamon
  • 1 teaspoon of vanilla
  • 1/4 cup of finely diced apples
  • 1/3 cup of Almond Fresh – almond milk ( i like the coconut one)
  • 1/4 cup of raisins
  • For the glaze ( any natural sugar you’d like + almond milk + vanilla) zest of an orange

Method:

  1. Set your oven to 350 degrees F & cover your 8×4 baking pan in coconut oil so that it is non stick.
  2. Dry Bowl: Whisk dry ingredients (or with a fork) flour, xanthan, baking powder, baking soda, cinnamon, salt
  3. Wet Bowl: With a Kitchen Aid Mixer,cream the eggs, mix banana, brown sugar, vanilla, coconut oil, almond milk.
  4. Add carrots, apples, raisins into the Wet Bowl.
  5. Add Wet Bowl to Dry Bowl, until combined.
  6. Add mixture to baking pan and cook for 50 mins.
  7. Remove from pan while warm, top with chocolate chips, walnuts and drizzle your glaze with some added orange zest if you wish.
