
- 2 ripe organic bananas, mashed
- 1 cup of shredded organic carrots
- 1 1/3 cup of Bob’s Red Mill Gluten Free All Purpose Flour
- 1 tablespoon Bob’s Red Mill xanthan gum
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1 tablespoon coconut oil, melted
- pinch of salt
- 1/2 cup of organic natural cane sugar
- 1 egg & 1 white
- 1 teaspoon cinnamon
- 1 teaspoon of vanilla
- 1/4 cup of finely diced apples
- 1/3 cup of Almond Fresh – almond milk ( i like the coconut one)
- 1/4 cup of raisins
- For the glaze ( any natural sugar you’d like + almond milk + vanilla) zest of an orange
Method:
- Set your oven to 350 degrees F & cover your 8×4 baking pan in coconut oil so that it is non stick.
- Dry Bowl: Whisk dry ingredients (or with a fork) flour, xanthan, baking powder, baking soda, cinnamon, salt
- Wet Bowl: With a Kitchen Aid Mixer,cream the eggs, mix banana, brown sugar, vanilla, coconut oil, almond milk.
- Add carrots, apples, raisins into the Wet Bowl.
- Add Wet Bowl to Dry Bowl, until combined.
- Add mixture to baking pan and cook for 50 mins.
- Remove from pan while warm, top with chocolate chips, walnuts and drizzle your glaze with some added orange zest if you wish.
