PANZANELLA – TASTE OF TUSCANY

Panzanella … A Tuscan dish inspired by one of my favourite restaurants in Toronto @union_restaurant …. So these are some gorgeous 3 coloured heirloom tomatoes I bought….then I grilled some day old focaccia bread and rubbed it with garlic. My gawdddd this is soooo good. And the juices at the bottom you can totally just drink 😋😋😋😋😋

What You’ll Need:
– 1 portion day old of focaccia or ciabatta loaf
-3 good size heirloom tomatoes
-sea salt and cracked pepper
-tbsp of capers
-red onion
-jarred roasted red peppers
-anchovies(optional)
-Italian parsley and basil
-red wine vinegar
-olive oil
-1 clove of garlic

Method:
– on a cast iron grill or bbq, grill you bread (olive oil on the grilling side of the bread then rub with the cut side of a 1/2 garlic clove
-chop bread into 3 inch pieces
-place tomatoes in a bowl and season. Rinse the capers and squeeze excess liquid into the bowl, add onion, sliced peppers, anchovies
-toss the mixture with your hands and add in 2 tablespoons of red wine vinegar and 3 times as much olive oil.
-season again and toss in herbs!
