Such a delicious breakfast idea, had a breakfast similar to this in Barcelona at Caravelle and I just had to recreate it at home. You can really play with the herbs here, Mint & Basil…. or Dill & Parsley. You can also do Whipped Feta instead of Ricotta:)
Ingredients:
- Herbs pick two (Mint & Basil ) or (Dill & Parsley)
- a good Sea Salt like Maldon & cracked pepper
- 1 small bag Fresh Peas, not frozen
- 1/2 cup ricotta or whipped feta
- 2 poached eggs
- lemon zest
- olive oil
- Really good sourdough bread
Method:
1. Toast your sourdough
2. Boil your peas and rough smash, leaving some whole, in a bowl with olive oil, salt & pepper with either Mint or Dill
3. Assemble bottom up, toast, peas with herb#1, cheese with lemon zest, eggs and herb #2.
